Traditional Danish Christmas dish, served with red cabbage and caramelized potatoes.
Roasted Crispy Pork
1 pork tenderloin with the skin without bones
1 tbsp. coarse salt
5 cups water
Cut the skin with ½ cm intervals avoid to cut the meat, dusting with salt and rub between all the cuts. Place meat on the ovens grid for roasting above the roasting pan. Put the meat into a cold oven, and pour 5 cups of water into the roasting pan. Heat oven to 200 degrees and roast meat for about 1 ½ hours. Using a meat thermometer control the temperature of the meat, when the temperature is 55 degrees and the skin is firm and crisp, continue roasting at 200 degrees until the meat temperature is 65 degrees. If the skin is not crispy set the oven at 250 degrees until the meat temperature is 65 degrees. Be careful that the skin does not become too dark or burnt. Before serving roasted crispy pork, it should rest a little bit. Roasted crispy pork is served in slices along the cuts on the skin with caramelized potatoes, dark sauce and red cabbage.
